What up #VTG fam!!! We had a great time filming the green tomato episode for many reasons:
Great weather, great food, good drinks, and OUTSTANDING friends and family! You must find your happy place. Once you find it, I suggest you stay there or at least visit as often as possible. Folks, this clip demonstrates my happy place. Utilizing all of the senses will invigorate one’s soul to the utmost. We were hitting on all cylinders. We had music, good smelling food, great tasting food, awesome stories. Young Ellis was on the stool, wanting to learn new things, we shared so much laughter….Oh and the Colonel Taylor….just stahp it.
Gang, I urge you all to stop the daily grind and get together with one another. We took some basic green tomatoes and some shrimp and mixed it with common household items to make something extraordinary. I can tell you one thing, I can do some work in the kitchen, but the entire scenario made them “damaters” taste so much netter!!

Shrimp Remolaude
1 cup chopped white onion ½ cup chopped celery
1 cup crawfish boil onion ½ cup chopped green onion
¼ cup garlic 4 cups mayo (Dukes is my favorite)
1 Tablespoon Worcestershire Sauce 1 Tablespoon Hot Sauce (Crystal)
1 Tablespoon Paprika 1 Teaspoon Salt
1 Teaspoon Lemon Pepper 1 Tablespoon Horseradish
Procedure:
In a food processor, puree onions, garlic, and celery until grainy, but uniform in small size. Add to a mixing bowl and add all other ingredients. Mix until fully incorporated. Refrigerate.
Boiled Shrimp
3# peeled and deveined Shrimp. (Size is up to you)
1 cup Crawfish Boil Seasoning granulated 1 Gal water
1 whole yellow onion 1 celery stalk
1 lemon cut in half
In a large pot, bring water to a rolling boil and add crawfish boil seasoning, onion, celery, lemon and juice then bring back to a boil. Add shrimp for three minutes then take off heat and let soak for 15 to 20 minutes. Refrigerate.
Fried Green Tomatoes
Green Tomatoes 3 cups Crushed Ritz Crackers
2 cups all-purpose flour (divided in half) 1 Tablespoon Salt
1 Tablespoon Pepper 1 Tablespoon Garlic
2 cups water 2 quarts vegetable oil
In a pie dish, mix 2 cups water, 1 cup flour, salt, pepper, and garlic and whisk together to form a paste. Refrigerate.
Wash and core green tomatoes. Cut them in 1/8-inch slices. Gently salt and set on a tray. Refrigerate.
In a separate pie dish, mix finely crushed ritz crackers and 1 cup flour. Use for dusting.
Heat oil to 350 degrees. Dredge tomatoes from the wet paste mix to the cracker breading. Fry in hot oil for approximately 4 minutes per side until golden brown. Once both sides are fried, drain on a tray covered with paper towels.
Top fried tomatoes with shrimp and remolaude dressing and enjoy!!! Pie Yaow!
